    vermicelli noodles
  • 30
    ml
    oil
  • 250
    g
    pork fillet, cut into strips
  • 10
    ml
    medium curry paste
  • pinch turmeric
  • 2.50
    cm
    piece fresh ginger
  • 2
    red chillies, seeded and chopped
  • 2
    whole chicken breasts, cut into strips
  • 250
    g
    prawns, cleaned (optional)
  • 150
    g
    baby spinach leaves
  • handful of bean sprouts
  • 4
    chives, chopped
  • fish sauce and soy sauce to taste
  • coconut milk
 

Method

 
Prepare the noodles according to the packet instructions.
Heat the oil in a wok and stir-fry the pork strips until just done.
Add the curry paste, turmeric, ginger, chillies and chicken and stir-fry for 2 minutes.
Add the prawns (if using), spinach, sprouts and chives and stir-fry for 3 to 4 minutes or until heated through.
Add the noodles and season to taste with the sauces.
Add a little coconut milk if the mixture is too dry.
Serve immediately.
