Ingredients (14)

250.00 g noodles — vermicelli
30.00 ml oil
250.00 g pork — fillet, cut into strips
10.00 ml curry paste — medium
0.00 turmeric — ground, pinch
2.50 cm fresh ginger
2.00 red chilli — deseeded and chopped
2.00 chicken breasts — cut into strips
250.00 g prawns — cleaned
150.00 g baby spinach
0.00 bean sprouts — handful
4.00 fresh chives — chopped
0.00 fish sauce — and soy sauce
0.00 coconut milk

Method:

Prepare the noodles according to the packet instructions.
Heat the oil in a wok and stir-fry the pork strips until just done.
Add the curry paste, turmeric, ginger, chillies and chicken and stir-fry for 2 minutes.
Add the prawns (if using), spinach, sprouts and chives and stir-fry for 3 to 4 minutes or until heated through.
Add the noodles and season to taste with the sauces.
Add a little coconut milk if the mixture is too dry.
Serve immediately.
