Ingredients (8)

4.00 hake fillets — frozen
salt and freshly ground black pepper — to taste
5.00 cm fresh ginger — strips
3.00 garlic — cloves, thinly sliced
7.00 fresh chives — thinly sliced
30.00 ml soy sauce
30.00 ml oil
8.00 baby corn — sliced into rings

Method:

Preheat the oven to 180 ºC and spray an ovenproof dish with non-stick spray or butter lightly.
Pat the fish fillets dry with paper towelling and season well with salt and pepper. Arrange in the ovenproof dish. Arrange half the ginger, garlic and chives on top of the fish and sprinkle with half the soy sauce. Cover and bake for 20 minutes.
Remove the cover and bake for another 5 minutes or until cooked and the fish is still moist and flakes easily with a fork. Meanwhile, heat the oil in a pan and sauce the remaining ginger, garlic and chives for 1 minute. Add the baby corn and the remaining soy sauce and heat for about 1 minute. Spoon the fried vegetables on top of the cooked fish and pour over the soy sauce. Serve hot with rice.
