Ingredients (14)

700.00 g chicken breast fillets
soy sauce
oil
250.00 ml peas — frozen
1.00 kg stir-fry vegetables — frozen
30.00 ml brown sugar
30.00 ml vinegar
30.00 ml jam — smooth, apricot
5.00 ml soy sauce
1.00 ml fresh ginger
salt
freshly ground black pepper
10.00 ml cornflour
60.00 g almonds — slivered

Method:

Cut the chicken fillets into strips and marinate for about 10 minutes in a little soy sauce. Heat oil in a pan and gently fry the strips of chicken until just done and still crisp. Combine the brown sugar, vinegar, apricot jam, soy sauce and ginger and add to the mixture in the pan. Season with salt and pepper if necessary. Simmer. Thicken the sauce with a little cornflour mixed with water, and cook through. Sprinkle with almonds and serve immediately with rice.
Serves 6-8.
