    chicken breast fillets
  • soy sauce
  • oil
  • 250
    ml
    frozen peas
  • 1
    kg
    frozen stir-fry vegetables
  • 30
    ml
    brown sugar
  • 30
    ml
    vinegar
  • 30
    ml
    smooth apricot jam
  • 5
    ml
    soy sauce
  • 1
    ml
    ginger
  • salt
  • pepper
  • 10
    ml
    cornflour
  • 60
    g
    slivered almonds
 

Method

 
Cut the chicken fillets into strips and marinate for about 10 minutes in a little soy sauce. Heat oil in a pan and gently fry the strips of chicken until just done and still crisp. Combine the brown sugar, vinegar, apricot jam, soy sauce and ginger and add to the mixture in the pan. Season with salt and pepper if necessary. Simmer. Thicken the sauce with a little cornflour mixed with water, and cook through. Sprinkle with almonds and serve immediately with rice. Serves 6-8.
