Easter ham with berry and orange glaze

Ingredients (14)

1.00 ham
2.00 onions — coarsely chopped
6.00 cloves
10.00 black peppercorns — whole
3.00 bay leaves
2.00 Litres ginger beer
Glaze
190.00 ml jelly — berry or berry jam
60.00 ml orange juice — fresh
30.00 ml orange liqueur
15.00 ml Dijon mustard
125.00 ml brown sugar

0.00 bread — ciabatta
0.00 mustard sauce

Method:

Place the ham in a large saucepan with the onions, spices and ginger beer.
Bring to the boil, reduce heat, cover and simmer. Allow 30 minutes for every 500g meat.
Allow to cool in the liquid.
Remove the skin and score the fat in diamond patterns.
Preheat the oven to 180 &degC.
Place the meat in an oven pan.
GLAZE
Place all the ingredients in a saucepan and heat until they have all dissolved together.
Spoon the glaze over the ham and bake for 30 to 40 minutes.
TO SERVE: Slice and serve hot or at room temperature on slices of ciabatta with mustard sauce.
