Dumplings: basic recipe

    ml
    cake flour
  • 2
    ml
    salt
  • 80
    ml
    sugar
  • 10
    g
    instant yeast
  • 1
    extra-large egg, whisked
  • 2
    extra-large egg yolks
  • 1
    lemon (rind only)
  • 50
    g
    butter, melted
  • 125
    ml
    milk
  • 5
    ml
    vanilla essence
 

Method

 
Sift together the cake flour, salt and sugar. Sprinkle the instant yeast on top. Add the whisked egg, egg yolks and lemon rind and mix. Heat the milk and butter until lukewarm and add to the flour mixture. Add the vanilla essence. Mix and knead for at least 10 minutes until the dough is smooth and elastic. Cover with plastic wrap and leave to rest in a warm place for about 10 minutes. Use as needed - see recipes for Apricot dumplings, Almond dumplings, Vanilla sauce and Dumplings with apple sauce.
