4.00 peaches
425.00 ml grape juice — sparkling
150.00 g strawberries — rinsed, hulled and halved lengthwise
cream
65.00 ml peach schnapps
250.00 ml cream — fresh, chilled

Method:

Halve the peaches and remove the stones. Skin and slice the fruit. If difficult to stone, skin and slice the peaches around the stones.
Place the peach slices and grape juice in a heavy-based saucepan and bring to the boil.
Reduce the heat and simmer for about eight minutes or until the peach slices are tender but still firm. Remove from the heat and add the strawberries. Set aside until cooled.
Spoon the peach mixture and juice into the bottom of a pudding glass. Reserve 60 ml (4 T) of the juice. Whip the cream until stiff, add the juice and peach schnapps. Spoon on top of the fruit in each glass.
Chill until just before serving.
