    cake flour
  • 30
    ml
    sugar
  • 10
    ml
    baking powder
  • 2
    extra-large eggs
  • 45
    ml
    oil
  • 125
    ml
    buttermilk
  • 185
    ml
    milk
  • TO SERVE
  • butter
  • assorted berries
  • whipped cream
 

Method

 
1. Sift the dry ingredients into a bowl. 2. In a separate bowl, beat the eggs with the oil, buttermilk and milk. Stir the liquid into the dry ingredients and mix until the liquid is incorporated. Do not overmix, a few lumps should still remain in the mixture. Leave to stand for one hour before using. 3. Lightly grease a heavy-based pan and heat until fairly hot over a low heat. Drop spoonfuls onto the pan. Turn with a spatula when the bubbles on the top have burst. 4. Serve warm, buttered and topped with assorted berries and whipped cream. Makes 12.
