Ingredients (11)

225.00 g flour — cake
30.00 ml sugar
10.00 ml Baking powder
2.00 eggs — extra-large
45.00 ml oil
125.00 ml Buttermilk
185.00 ml milk
to serve — to serve
butter
mixed berries
cream — fresh, whipped

Method:

1. Sift the dry ingredients into a bowl.
2. In a separate bowl, beat the eggs with the oil, buttermilk and milk. Stir the liquid into the dry ingredients and mix until the liquid is incorporated. Do not overmix, a few lumps should still remain in the mixture. Leave to stand for one hour before using.
3. Lightly grease a heavy-based pan and heat until fairly hot over a low heat. Drop spoonfuls onto the pan. Turn with a spatula when the bubbles on the top have burst.
4. Serve warm, buttered and topped with assorted berries and whipped cream.
