Ingredients (12)

80.00 ml cream cheese — softened
60.00 ml castor sugar
1.00 0 eggs — yolk only
45.00 ml milk
375.00 ml flour — cake
0.00 0 salt
5.00 ml Baking powder
80.00 ml figs — dried, chopped
125.00 ml apricots — dried, chopped
3.00 ml lemon — zest only
80.00 ml honey — clear
2.00 ml cinnamon — ground

Method:

Preheat oven to 180 degrees C.

Grease a baking sheet.

To make pastry: beat together
cream cheese and castor sugar
until fluffy.

Beat in egg yolk
and milk then sift in flour, a pinch
of salt and baking powder.

Knead into a smooth dough.

Cover with plastic wrap and
refrigerate for 2 hours.

To make filling: place all
ingredients in a food processor.
Process in short bursts
until finely chopped or mix
thoroughly by hand and then
mash with potato masher.

Divide pastry into two and
press one portion evenly
onto the baking sheet.

Spoon the filling on top of
pastry, smooth out evenly,
and then cover with remaining
pastry (you may prefer
to grate the pastry dough on
top of the filling).

Bake for 15 to 20 minutes,
or until golden.

Leave for 2
to 3 minutes, cut into evensized
squares, and cool on a
wire rack.

Cover with glacé icing.
