    quantity basic sweetened dough (see recipe)

    sultanas
  • 80
    ml
    chopped dried apricots
  • 80
    ml
    chopped dried pears
  • 125
    ml
    sugar
  • 100
    ml
    water
  • 6
    cardamom pods
 

Method

35-40 min
 
Prepare dough according to basic sweetened dough recipe. After first rising, add fruit to the dough and knead again until fruit is worked in. Roll dough into a log shape and place in a greased loaf tin. Cover with a damp cloth and allow to rise until doubled in size. Bake in a preheated oven at 200 ºC for 35-40 minutes. While bread is baking, place sugar, water and cardamom pods in a saucepan. Bring to the boil and allow to simmer until reduced by half. Remove cardamom pods. As soon as the bread comes out of the oven, brush the syrup over the top and allow to soak in. Serve sliced for breakfast or tea. Makes 1 loaf.
