    sultanas

    currants
  • 125

    pitted prunes
  • 650

    wholewheat breadcrumbs
  • 500

    Granny Smith apples, peeled, cored and grated
  • 100

    pistachio nuts, shelled, or walnuts
  • 45

    butter
  • 2
    medium onions, chopped
  • 25
    ml
    chopped fresh parsley
  • 2
    ml
    ground ginger
  • salt
  • freshly ground black pepper
  • 2
    eggs, beaten to blend
  • 125
    ml
    chicken stock
 

Method

 
1. Soak the dried fruit. Once swollen, drain and chop the prunes. Mix the breadcrumbs with the fruit and nuts in a large bowl. 2. Melt the butter and sauté the onion. Add to the crumb mixture with the parsley. Add seasoning. (The stuffing can be prepared to this stage 1 day before serving.) 3. Mix in the eggs and chicken stock.
