  • dried beans of your choice
  • water to cover generously
 

Method

 
Place beans or peas in a large bowl and cover generously with cold water. Allow to soak for at least 8 hours. Drain and rinse. Place the beans or peas in a saucepan and cover generously with cold water. Bring to the boil and boil rapidly for 10 minutes. Reduce the heat to low, cover and simmer gently until tender. To test, squeeze gently, they should feel soft through to the centre.
