Dried apricot chutney

  • 450
    g
    dried apricots, whole or chopped (do not mince)
  • 600
    ml
    white grape vinegar
  • 300
    g
    sugar
  • 2
    whole pieces stick cinnamon
  • 6
    whole peppercorns
  • 5
    ml
    whole coriander seeds (optional)
  • 4
    allspice seeds (optional)
  • 5
    ml
    mustard seeds (optional)
  • 1
    green chilli (optional)
  • 5
    cm
    piece fresh ginger, peeled and grated
 

Method

40-60 min
 
Soak the apricots in about 100 ml of the vinegar for 1 hour. Heat the remaining vinegar, sugar and seasonings in a large saucepan. Stir continuously until the sugar has dissolved and bring to the boil. Boil rapidly for 15 to 20 minutes. Add the apricots, reduce the heat and simmer for 15 to 20 minutes or until the mixture is no longer watery. Stir frequently, taking care the mixture does not burn. Bottle the chutney while still hot. Makes 500 ml of chutney.
