    vanilla essence

    flour
  • 2
    ml
    baking powder
  • 375
    ml
    coconut
  • 250
    ml
    bottled fruit mince
  • 90
    ml
    icing sugar
 

Method

 
1. BASE: Beat butter and sugar until light and creamy. Sift in flour and mix well. 2. Press mixture into a 28 cm x 18 cm greased baking tin, lined with greaseproof paper. Bake at 190 ºC for 10 minutes. Remove from oven and set aside. 3. TOPPING: Beat eggs, sugar and vanilla essence together until thick and creamy. Fold in the dry ingredients and fruit mince; mix well. 4. Spread the topping onto the base and bake for a further 25 to 30 minutes until firm and golden brown. 5. Allow to cool in tin. When cold, dust with sifted icing sugar and cut into slices.
