    cake flour

    salt

    sugar
  • 15

    instant yeast
  • 100

    butter
  • 2
    eggs
  • 200
    ml
    milk
  • 200
    g
    extra sugar
  • Filling
  • glacé fruit
 

Method

 
Stir the flour, salt and first quantity of sugar in a large mixing bowl. Mix in the yeast.
Rub butter into the dry ingredients. Beat eggs and milk to combine and stir into the flour mixture to form a smooth dough.
Turn out on to a floured surface and knead until the dough becomes smooth and elastic, adding extra flour if the dough is too sticky. Cover with cling film and leave to rise for 6 to 8 hours in a cool place.
Punch down and cut into 18 pieces. Roll pieces to form neat balls. Using your thumb, push a hole into each ball. Fill with slivers of individual glacT; fruits or with fruit and nut mix. Roll into balls.
Place balls on a tray lined with greaseproof paper, cover with cling film and leave in a warm place to rise to double in size.
Carefully drop risen dough into deep oil over medium heat and allow to fry, turning once, until golden on both sides.
Spread extra sugar on a baking tray, remove doughnuts from the oil with a slotted spoon and toss in sugar to coat.
