Ingredients (8)

3.00 eggs — large
30.00 ml golden syrup
125.00 ml sugar
500.00 ml flour — self-raising
185.00 ml milk — or water
salt
oil — for frying
375.00 g sweet red bean paste

Method:

1. Beat the eggs and syrup together, then add the sugar and continue beating until the mixture is light and the sugar has dissolved.
2. Sift in the flour and add half the milk or water and a large pinch of salt. Mix well, then set aside for 10 minutes before adding the remaining milk or water. If necessary, add extra liquid to make the batter the consistency of heavy cream.
3. Rub a frying pan with a piece of paper towel dipped in oil. Drop large spoonfuls of the batter into the pan and cook until light brown underneath with bubbles on the surface. Flip over and cook the other side, then remove from the pan and cover with a cloth until all the pancakes are cooked.
3. Spread red bean paste on half the pancakes and cover with the remaining pancakes. Heat the end of a metal skewer and score a pattern on top of each pancake sandwich.
