Peel and mash eggs. Mix in mayonnaise. Divide mixture in half.
Add grated carrot to one half and mix well. Add two drops green food colouring to the other half and mix well.
Cut crusts off the bread, then cut bread lengthways into slices.
Spread one side of each slice with butter. Spread some of the green mixture onto a buttered side of one slice. Top with another slice of bread. Top that one with the orange egg mixture and top with another slice of bread, buttered side inwards. Make more sandwiches with remaining bread and filling.
Cut into small rectangles or use a round cookie cutter to cut into rounds.
Dip the fish pieces into the flour and make sure they are well coated.
Dip each piece into the egg white, then into the breadcrumbs. Coat well, then place each piece onto an oiled baking tray.
Bake in preheated oven for 10 minutes. Remove from the oven, turn over each piece and bake for a further five to 10 minutes until crisp. Serve with tomato sauce.
