Dhal soup (Red lentil soup)

    butter
  • 1
    medium onion, finely chopped
  • 2
    cloves garlic, crushed
  • 15

    ground coriander
  • 1
    piece stick cinnamon
  • 5

    turmeric
  • 5
    ml
    cumin seed (jeera)
  • 1
    ml
    cayenne pepper
  • 250
    ml
    red lentils, washed
  • 2
    Litres
    chicken stock
  • 30
    ml
    tomato paste
  • 1
    lemon (juice)
 

Method

 
Heat the butter in a large saucepan and sauté the onion and garlic until soft. Add all the seasonings and stir-fry for about one minute. Add the lentils, chicken stock and tomato paste. Bring to the boil before reducing the heat. Simmer for about 30 minutes or until the lentils are soft. Season with lemon juice and mix. Serve with fresh bread. Serves 6.
