    marinade oil

    large onions, sliced

    garlic cloves, crushed
  • 30

    mild curry powder
  • 2
    red chilli, chopped
  • 3
    bay leaves
  • 15

    chopped ginger

    smooth apricot jam
  • 350
    ml
    wine vinegar
  • 500
    ml
    milk
  • 1.50
    kg
    meat boneless mutton or lamb
  • 1.50
    kg
    boneless pork with fatty layer
  • 50
    dried apricots

Marinade Heat the oil in a saucepan and sauté the onions and garlic until the onions are soft.
Add the curry powder and sauté for 2 minutes.
Add the remaining marinade ingredients except the milk and simmer for 10 minutes.
Remove from the heat, leave to cool and stir in the milk.

Meat Meanwhile cut the mutton and pork into 2,5 cm cubes.
Marinate the meat in the curry mixture for at least 24 hours.
Using 16 skewers, thread 6 meat cubes onto each skewer, alternating them with 1-3 apricots.
Braai over medium hot coals until browned and done.
Baste the sosaties frequently with the marinade while cooking.
Serve with rice and sambals.
