Delicious salad with bacon and nuts

  • SALAD DRESSING
  • 80
    ml
    walnut oil
  • 80
    ml
    olive oil
  • 30
    ml
    balsamic vinegar
  • 15
    ml
    fresh lemon juice
  • 1
    clove garlic, crushed
  • pinch ground cumin (jeera)
  • pinch ground coriander
  • salt and freshly ground black pepper
  • SALAD
  • 6
    rashers bacon
  • mixed lettuce leaves
  • 1
    green pepper, seeded and sliced into strips
  • 2
    small carrots, scraped clean and sliced into julienne strips
  • 125
    ml
    feta cheese, broken into pieces
  • 125
    ml
    cashew or macadamia nuts
 

Method

 
Blend all the ingredients for the salad dressing in a container with a lid. Shake well and refrigerate until needed. Fry the bacon until crisp and chop finely. Set aside. Arrange the lettuce leaves with the remaining salad ingredients on a pretty serving platter. Sprinkle with chopped bacon and serve with the salad dressing.
