Delicious rice and haddock dish

    haddock fillets or steaks

    milk

    baby peas (petit pois), drained

    tomato, thinly sliced

    freshly chopped parsley
 

Method

 
Cook the rice in the chicken stock and salt for 20-25 minutes or until soft and fluffy. Heat the oil and butter in heavy-based pot and fry the onion until soft and translucent. Add the haddock and milk and simmer for 8-10 minutes or until tender. Drain the milk and flake the fish, mixing it with the onions. Add the rice, peas, tomato and parsley and mix thoroughly. Heat through and serve immediately. Serves 4.
