    onion, cut into pieces

    large mutton shanks
  • cake flour seasoned with salt and pepper
  • meat stock, heated

    baking powder

    egg
  • 125
    ml
    buttermilk
  • 125
    ml

Method

 
Preheat the oven to 180 ºC (350 ºF). Sauté the onion in a little heated oil till soft. Roll the mutton shanks in the seasoned cake flour and brown in heated oil. Add a generous amount of meat stock, reduce the heat, cover and simmer till the meat is tender. Add more meat stock if necessary, and season with extra salt and pepper to taste. Turn the meat and sauce into an ovenproof dish. Sift the dry ingredients together. Whisk the remaining ingredients together, mix with the dry ingredients and pour over the shanks. Bake for 25-30 minutes or till the crust is golden brown. Serves 4.
