Ingredients (11)

500.00 g noodles
1.00 garlic — cloves, crushed
1.00 red pepper — seeded and diced
250.00 g brown mushrooms — large, sliced
250.00 g ham — sliced
300.00 g spinach — finely chopped
100.00 ml stock — chicken
410.00 g evaporated milk
15.00 ml cornflour — mixed with water
salt and freshly ground black pepper
cheddar cheese — grated, to serve

Method:

Cook the noodles in rapidly boiling salted water until soft. Drain well and set aside.
Sauté; the garlic and red pepper in a little oil until glossy. Add the mushrooms and stir-fry until most of the liquid has evaporated. Add the ham and spinach and mix.
Reduce the heat and add the stock and evaporated milk. Simmer until the sauce comes to the boil and thickens slightly.
Alternatively, thicken the mixture with the cornflour paste.
Season with salt and pepper and spoon over the noodles. Sprinkle with cheese.
