    extra-large eggs
  • 2
    Litres
    milk
  • 5
    ml
    salt
  • 500
    ml
    oil
  • 15
    ml
    vanilla essence, or vanilla seeds in one vanilla pod
  • 560
    g
    self-raising flour
 

Method

 
Whisk the eggs, add the milk, salt and oil and beat well. Add the vanilla essence or split and scrape out the tiny black seeds inside the vanilla pod. Mix in small quantities of the self-raising flour at a time, beating well until the mixture is lump-free, leave for at least an hour. Spray a pan with non-stick spray or lightly brush the heated pan with oil. Pour just enough batter in the pan to cover the base. Turn the pancake when air bubbles appear on top and heat until brown on both sides. Repeat with the remaining batter. Makes about 40 pancakes.
