Delicious pan-fried fish

Ingredients

 
  • 10
    ml
    garlic salt
  • 10
    ml
    cayenne pepper or paprika
  • 10
    ml
    mustard powder
  • 10
    ml
    dried mixed herbs
  • 10
    ml
    flavour enhancer (Aromat)
  • 5
    ml
    mild curry powder
  • 800
    g
    frozen hake fillets
  • oil for shallow frying
  • soy sauce or lemon juice to taste

Method

 
Mix together the first six ingredients. Skin the fish fillets while still frozen. Sprinkle the fish generously with the seasoning mixture and pan-fry in a little heated oil until just done and the fish flakes easily. Sprinkle with soy sauce or lemon juice just before the fish is removed from the pan and serve with savoury rice and a salad. Serves 4-6.

Basic basil care
Basil wilts quickly, but will perk up when left in cool water for about 30 minutes. Then blot the leaves dry and store them at room temperature in a tightly sealed bag. If basil is stored in the refrigerator, it turns black.
