Delicious crumpets

Ingredients

  • 250
    ml
    flour
  • 2
    ml
    salt
  • 45
    ml
    castor sugar
  • 2
    eggs, beaten
  • 1
    small can (165 g Nestlé Ideal evaporated milk)
  • 15
    ml
    butter, melted
  • 15
    ml
    baking powder
  • oil for greasing
 

Method

 

Sift together flour and salt. Add castor sugar.
Beat eggs, Ideal milk and butter together.
Make a well in the centre of the flour mixture, beat in liquid with a wooden spoon until smooth.
If necessary, add more Ideal milk until batter is the consistency of thick cream.
Stir in baking powder and set batter aside to rest for 10 minutes.
Grease the base of a heavy-based frying pan and place over a moderate heat.
When pan is hot, drop spoonfuls of batter onto the pan and cook until bubbles appear on the surface and underneath is golden brown.
Turn over and cook the other side.
Remove, keep warm until all the crumpets are cooked, re-greasing pan as necessary.

Tips:
Serve warm with butter and golden or maple syrup for a delicious breakfast, OR allow to cool and serve buttered, with jam and cream for tea.
