Delicious chocolate cheese soufflé with Amaretto cream

    dark Nestlé EasyMelt Chocolate, melted

    Amaretto liqueur

  • icing sugar for dusting

  • 300

    cream, whipped
  • 30

    Amaretto liqueur
  • 30
    ml
    icing sugar
 

Method

 
1. In a bowl, beat together the egg yolks and castor sugar until thick and pale in colour. Remove from the bowl. 2. Put the ricotta in a mixing bowl and blend in the flour, chocolate, Amaretto and cream. 3. Gradually add the egg mixture beating continuously. 4. Beat egg whites until stiff and fold into the cheese mixture. 5. Pour into a large 850 ml prepared soufflé dish and bake at 180 ºC for 45 to 55 minutes until cooked through. 6. Serve immediately, dusted with icing sugar and the Amaretto liqueur alongside. 7. To prepare the Amaretto cream, mix together the thickly whipped cream, Amaretto and icing sugar. 8. Place in a bowl and serve with the soufflé.
