    minced pork

    hot curry powder

    fresh lemon juice or vinegar

    mild fruit chutney

    grated apple or carrot

    thick slices white bread, soaked in water and mashed

    lemon or bay leaves

    sour cream (smetena)

  • salt and freshly ground black pepper to taste
 

Method

Preheat the oven to 190 ºC and spray a large ovenproof dish with non-stick spray or butter lightly. Heat the oil in a large saucepan and brown small quantities of the pork mince at a time. Use a fork to break up any lumps. Add the onion and garlic and fry for 2 minutes. Add the curry powder, turmeric and other spices and fry for 1 minute. Season well and stir in the remaining ingredients, except the lemon leaves. Turn into the prepared dish and insert the leaves so the tips point up. Beat the ingredients for the topping together and pour over the meat. Bake for 40-45 minutes until the topping has set and is golden brown. Leave for a few minutes and serve with white rice and peach chutney. Serves 6.
