Decadent ice cream

  • 500
    g
    glacé fruit mixture
  • 125
    g
    butter or margarine, melted
  • 125
    ml
    white sugar
  • 100
    g
    mixed nuts, toasted and coarsely chopped
  • 30
    ml
    brandy
  • 50
    ml
    honey
  • 2
    Litres
    full-cream vanilla ice cream, slightly softened
 

Method

 
Heat the glacé fruit, butter and sugar together, stirring until the sugar has dissolved. Simmer for 5 minutes, remove from the stove and add the nuts and brandy. Chill in the fridge until completely cooled. Stir half the fruit mixture and honey into the ice cream. Return to the freezer and freeze until hard. Spoon the remaining fruit mixture on top of the ice cream or on plain vanilla ice cream just before serving.
