Decadent Chocolate Mayonnaise Cake

Ingredients (12)

750 ml flour
375 ml castor sugar
200 ml cocoa powder
5 ml salt
7 ml Bicarbonate of soda
375 ml water
5 ml vanilla — essence
280 ml mayonnaise
125 ml cherries — chopped, optional
50 g walnuts — or pecans, coarsely chopped, optional
TOPPING:
1 Caramel Treat
200 g nestlé easymelt chocolate — dark, melted

Method:

Preheat oven to 180.
Grease a 22 cm square cake pan.
Sift dry ingredients together twice.
Mix water, vanilla and mayonnaise together and add to the dry ingredients.
Mix lightly.
Fold in cherries and nuts, if using.
Spoon batter into the prepared pan and bake for 50-60 minutes or until done.
Turn out to cool.
Combine the TREAT and melted EASY MELT together and spread over cooled cake.
Decorate as desired.
If serving as a dessert, simply omit the topping and serve warm, with custard, cream or ice cream.
