Date pudding with cardamom toffee sauce

    bicarbonate of soda

    boiling water
  • 30

    margarine
  • 170
    g
    castor sugar

    eggs
  • 180

    self-raising flour

    ml
    vanilla essence
  • CARDAMOM TOFFEE SAUCE
  • 140

    brown sugar
  • 125
    ml
    cream
  • 1
    vanilla bean, split
  • 30
    ml
    margarine
  • 4
    cardamom pods, crushed
 

Method

 
Mix dates and bicarbonate of soda. Pour water over dates and leave to stand. Cream margarine and sugar until pale. Beat in eggs one at a time. Gently fold in flour, stir in date mixture and vanilla, pour into a well- greased 18 cm-square cake tin. Bake at 180 degrees ºC for 30-40 minutes, until cooked. Bring sauce ingredients to the boil and simmer for five minutes. Cut pudding into squares and place on dinner plates. Discard vanilla bean and cardamom pods, pour sauce over pudding and serve.
