Date and walnut bread

    chopped dates

    bicarbonate of soda
  • 30
    ml
    butter
  • 145
    g
    yellow sugar
  • 1
    large egg
  • 125
    ml
    chopped walnuts
  • 5
    ml
    vanilla essence
  • 240
    g
    flour
  • 5
    ml
    baking powder
 

Method

Soak the dates in 190 ml boiling water.
Add bicarbonate of soda and cool.
Beat butter and sugar together.
Beat in the egg, walnuts and vanilla essence.
Sieve in the flour, baking powder and a pinch of salt.
Stir in cooled date mixture.
Pour into a greased and lined loaf tin and bake in a preheated 180 °C oven for 45 to 60 minutes or until a skewer inserted comes out clean.
Cool for 10 minutes before removing from the tin.
