Ingredients (11)

240.00 g flour — cake
2.00 ml salt
2.00 ml Bicarbonate of soda
5.00 ml Baking powder
150.00 g castor sugar
150.00 g dates — finely chopped
15.00 ml orange — zest only
125.00 ml water — boiled
125.00 ml orange juice — fresh
1.00 eggs — whisked
45.00 ml butter — melted

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 23 x 13 x 7 cm loaf tin with margarine.
Sift the dry ingredients together.
Combine the dates and orange rind and pour the boiling water over the mixture. Stir well and cool completely.
Add the orange juice, egg and butter to the date mixture and mix well. Finally, sift in the dry ingredients and add to the date mixture, mixing well.
Spoon into the prepared tin and bake for about 40 minutes or until a testing skewer comes out clean when inserted into the centre of the loaf.
Cool slightly in the tin before turning the loaf out on a wire rack to cool completely.
Makes a medium loaf.
