Ingredients (10)

FILLING
250.00 g dates — chopped
60.00 ml castor sugar
60.00 ml water
40.00 g walnuts — finely chopped
DOUGH
80.00 g butter
125.00 ml castor sugar
1.00 eggs — large, beaten
500.00 ml flour — plain
1.00 ml salt
8.00 ml Baking powder

Method:

1. Place dates, sugar and water in a medium-sized saucepan. Cook to a mush and add nuts. Remove from heat and cool.
2. Cream the butter and sugar thoroughly, add the egg and beat well, then sift in the flour, salt and baking powder. Mix together to form a firm dough. Chill in the refrigerator for 15 minutes.
3. Roll out the chilled dough to an oblong shape, about 7 mm thick, spread with the cooled date filling, and roll up closely as for a Swiss roll. Wrap in greaseproof paper and chill overnight in the refrigerator.
4. Cut into slices and place on a greased baking sheet. Bake at 190 ºC for 10 to 20 minutes, or until lightly golden brown.
