Date and macadamia nut chocolate brownies

    extra large eggs - beaten
  • 350
    g
    castor sugar
  • 15
    ml
    vanilla extract - or essence
  • 1
    orange, juice and grated peel
  • 150
    g
    butter - melted
  • 100
    g
    dark chocolate chips - melted
  • 70
    g
    cocoa powder
  • 150
    g
    self-rising flour
  • 1
    tsp
    baking powder
  • 1
    packet macadamia nuts
  • 100
    g
    fresh pitted dates - roughly chopped
 

Method

Preheat oven to 180°C. Grease and line a 20cm square baking tin.

Briefly beat eggs and sugar together. Stir through vanilla, orange juice, peel, melted butter and chocolate.

Sift over dry ingredients (including cocoa) and fold in to incorporate. Stir through nuts and dates.

Pour into baking tin and bake for 40 minutes or until set but still slightly soft in the centre. Cool in tin, un-mould, slice and serve.
