Dark chocolate and hazelnut semi-freddo

Ingredients

    ml
    cream
  • 150
    g
    castor sugar
  • 100
    g
    slab 70 percent dark chocolate, melted
  • 4
    eggs, separated
  • 45
    ml
    icing sugar
  • 150
    g
    hazelnuts, roughly chopped
  • 100
    g
    Whispers, roughly chopped
 

Method

 
Heat 250 ml cream.
Combine castor sugar, chocolate and egg yolks, pour cream over and mix well.
Pour back into the saucepan and cook over low heat, stirring until thick enough to coat the back of a wooden spoon.
Do not boil.
Cool for about 30 minutes.
Whisk egg whites until stiff peaks form.
Add icing sugar and whisk.
Whip remaining cream. Fold cream, then egg whites into the mixture.
Fold in nuts and Whispers.
Spoon into a metal bowl, cover with clingwrap and freeze for at least 24 hours.
