Makes 6 large waffles
Preparation Time 15 minutes, plus standing time
Cooking Time 15 to 20 minutes
1 Put the flour, baking powder, sugar and a pinch of salt into a bowl and make a well in the centre of the dry ingredients.
2 Whisk the egg yolks, oil, buttermilk and milk together. Pour into the well. Stir the dry ingredients inwards from the edge of the well to form a smooth batter. Leave to stand for 15 minutes.
3 Beat the egg whites until stiff. Fold into the prepared batter.
4 Heat a waffle iron. Brush the inside of the waffle iron with melted butter. Pour in some of the batter. Close the waffle iron and cook for one minute or until golden. Remove from the waffle iron and repeat with the remaining batter.
5 Serve topped with ice cream and drizzled with syrup.
