Baked sweet potatoes with goat’s cheese and thyme-browned butter

Ingredients (4)

4 sweet potatoes — large
1 chevin — organic
5 fresh thyme
1/3 cup butter

Method:

Preheat the oven to 230°C.

Place the sweet potatoes on a baking sheet and bake for 40 minutes to one hour or until cooked through.


Remove the potatoes from the oven. Place the butter in a small pot and heat over a medium heat, swirling occasionally, until the white solids in the butter start turning golden brown. Add the thyme leaves to the saucepan and remove from the heat.
Cut a slit in the top of each sweet potato, fill with some chevin, pour over the browned butter and serve.
