500 ml milk
250 ml cream
4 eggs — large, yolk only
125 ml sugar
5 ml vanilla — extract
125 ml chocolate — chips
80 ml brittle — nut or praline

Method:

Makes 750ml

Prepare the vanilla gelato according to the recipe below. Just before freezing add the chocolate chips and the chopped nut brittle or praline. Serve scooped into sugar cones.

Gelato

Gelato is similar to ice cream, but it contains milk and uses less cream than ice cream.

Warm the milk and cream together in a saucepan over a medium heat. Just before it starts to simmer, remove from the heat.

Beat the egg yolks, sugar and vanilla together in a bowl. Pour the warm milk into the egg mixture, whisking continuously. Pour the mixture into a heavy-based saucepan and continue to cook over a gentle heat until the mixture coats the back of a spoon. Remove from the heat, pour through a sieve and cool. Chill overnight.

Pour the mixture into an ice-cream machine and churn it until ready. Transfer to an airtight container and freeze until needed. If you don’t have an ice-cream machine, pour the mixture into a container and freeze until just beginning to set. Whisk to break up the crystals and then freeze again until you are ready to serve the ice cream.
