Daikon salad

  • 500
    ml
    peeled and coarsely grated daikon
  • 1
    green apple
  • generous handful of baby green beans, optional
  • 2
    chillies
  • 2
    cloves garlic
  • 5
    ml
    sugar
  • 30
    ml
    fish sauce
  • 1
    fresh lime or lemon juice (or more to taste)
  • 2
    dried shrimp
  • 65
    ml
    raw peanuts
 

Method

 
Place daikon and apple in a large bowl and set aside.
Cook beans in boiling water for 4-5 minutes.
Remove, drain, and chill in cold water.
Mix chilli, garlic, sugar, fish sauce and lime juice together.
Pour mixture over daikon and apple mixture.
Add beans, shrimp and peanuts and toss to blend flavours.
Prepare ingredients before time and assemble just before serving.

Note: the dried shrimp is both exotic-looking and packed with flavour. If unavailable, use a small amount of dried shrimp paste, diluted in boiling water.
