  • 400
    ml
    milk
  • 1
    vanilla pod, split (or use vanilla essence)
  • 3
    large egg yolks
  • 50
    g
    castor sugar
  • 10
    ml
    cornflour
 

Method

 
Heat the milk over medium heat until hot. Turn off the heat and add the vanilla pod. Cover and allow to infuse for 20 minutes. (If using essence, there's no need to infuse). Beat the egg yolks, sugar and cornflour with a whisk until combined. Remove the vanilla pod from the milk. Whisk the milk, a little at a time, into the egg yolk mixture. Return to the saucepan and stir over a low heat with a wooden spoon. Cook for 5 minutes, stirring constantly, until the custard is smooth and coats the back of the spoon. Makes: ± 500ml
