Curzon Manor baked salmon and eggs

    slices smoked salmon
  • 4
    large eggs
  • 60
    crème fraîche
  • 10
    chopped dill
  • sprigs of dill, to garnish

Trim a 4 cm strip from each piece of salmon and reserve.
Line four ramekin dishes with a slice of salmon and crack an egg into each. Season to taste.
Mix the crème fraîche and chopped dill in a jug and divide among the ramekins. Place the ramekins in a roasting pan half-filled with hot water.
Bake in a preheated 175 °C oven for 15 minutes.
Garnish with the reserved salmon and dill.
