Ingredients (9)

125.00 ml coriander — seeds
60.00 ml cumin — seeds
30.00 ml fennel — seeds
30.00 ml fenugreek seeds
4.00 dried red chillies
5.00 curry leaves
GROUND SPICES
15.00 ml chillies — powder
15.00 ml turmeric
3.00 ml salt

Method:

1. Dry-roast whole spices in a heavy-based pan for 8 to 10 minutes, shaking the pan from side to side until the spices begin to darken and release a rich aroma.
2. Place the dry-roasted spices in a coffee grinder or use a pestle and mortar to grind to a fine powder. Allow to cool slightly. Add remaining ground spices and store in an airtight container.
