Curry and yoghurt salad dressing

    onion, finely chopped

    cooking oil
  • 15
    ml
    mild curry powder
  • 1
    ml
    turmeric
  • 100
    ml
    mayonnaise
  • 10
    ml
    plain yoghurt
  • 15
    ml
    lemon juice
  • 30
    ml
    smooth apricot jam
  • 5
    ml
    salt
  • freshly ground black pepper to taste
 

Method

 
Sauté the onion in the heated oil until soft. Add the curry powder and stir-fry for about one minute until soft. Cool. Add the remaining ingredients and mix well. Process in a food processor if desired. This dressing keeps for about two weeks in the fridge.
