Curried vegetable patties

    ml
    vegetable oil
  • 1
    small onion, finely chopped
  • 5
    ml
    curry powder
  • 150
    g
    frozen mixed vegetables, cooked
  • 50
    ml
    mayonnaise
  • salt and freshly ground black pepper
  • halved, cooked patty pans
 

Method

 
1. Heat oil in a small frying pan and cook onion until transparent. 2. Add curry powder and fry for 1 minute. Remove from heat and cool completely. 3. Stir in vegetables, moisten with enough mayonnaise and adjust seasoning. 4. Fill hollowed, cooked patty pans with curry vegetable mixture.
