Curried sweet potato and parsnip latkes

    potato flour
  • 10
    ml
    sugar
  • 5
    ml
    brown sugar
  • 5
    ml
    grated fresh ginger
  • 2
    ml
    cayenne pepper
  • 10
    ml
    curry powder
  • 5
    ml
    ground cumin
  • salt and milled pepper
  • 2
    eggs, beaten
  • 50
    ml
    milk (you may need more)
  • 300
    g
    sweet potatoes (peeled weight), grated
  • 150
    g
    parsnips (peeled weight), grated
  • 45
    ml
    sunflower oil
 

Method

 
Mix flour, sugars, spices and seasoning. Add eggs and just enough milk to make a stiff batter. Add vegetables and mix. Heat oil in a frying pan. Drop in spoonfuls of batter and flatten with a spatula. Fry each side until golden and drain on absorbent paper.
