Curried soup with peas

    large onion, finely chopped

    butter for sautéeing

    curry powder
  • 2
    ml
    paprika
  • 30

    cake flour
  • 750
    ml
    boiling water
  • 2
    vegetable stock cubes
  • 1
    bay leaf
  • 125
    ml
    milk
  • 125
    ml
    cream
  • 250
    ml
    frozen peas
 

Method

 
Sauté the onion in the butter until tender and glossy. Add the curry powder, paprika and cake flour and stir-fry for about 1 minute. Pour the boiling water over the stock cubes and add the curry mixture. Add the bay leaf, stirring continuously until the soup comes to the boil and thickens. Add the milk, cream and peas and simmer for another few minutes until the peas have defrosted and the soup is warmed through. Serves 2-3.
