Ingredients (10)

1.00 onion — large, sliced
2.00 garlic — cloves, crushed
2.00 pieces cinnamon — stick
2.00 fresh chillies — deseeded, sliced
oil
15.00 ml curry powder — mild
5.00 ml cumin — ground
2.00 kg pumpkin — flat white, peeled, sliced
sugar — taste
fresh parsley — chopped

Method:

Sauté the onion along with the garlic, cinnamon and chilli in a little oil till the onion is soft. Add the seasonings and stir fry for another minute, taking care that the mixture does not burn. Add the pumpkin slices and a little water. Season with salt and simmer till the pumpkin is soft, but not mushy. Add sugar to taste and bring to the boil once more. Serve with a sprinkling of chopped parsley.
Serves 4.
