Curried potato salad

    baby new potatoes, peeled
  • 4
    spring onions, chopped
  • 65

    sultanas
  • 15
    ml
    fresh coriander, chopped
  • 15
    ml
    fresh basil, chopped
  • 30
    ml
    pine nuts, toasted
  • Dressing
  • 125
    ml
    mayonnaise
  • 125
    ml
    sour cream
  • 30
    ml
    fruit chutney
  • 5
    ml
    red curry paste
  • 1
    small clove garlic
 

Method

 
Boil potatoes until tender.
In a large bowl combine warm potatoes, spring onions, sultanas, herbs and dressing.
Toss lightly and sprinkle with pine nuts.
To make dressing, combine all ingredients in a bowl and mix well.
