Curried pineapple salad

Ingredients

  • 2
    large pineapples, peeled and cubed
  • 320
    g
    sugar
  • 2
    large onions, sliced into rings
  • 5
    ml
    salt
  • 100
    ml
    medium-strength curry powder
  • 125
    ml
    white vinegar
  • 5
    ml
    mustard powder
  • 10
    ml
    cornflour
 

Method

30 minutes
 
Combine all the ingredients except the cornflour in a large saucepan.
Cook over a low heat until the sugar has melted.
Increase the heat and bring the mixture to the boil, then reduce the heat and allow to simmer for 30 minutes.
Add a little water to the cornflour to make a paste and stir into the pineapple mixture.
Cook for a further two minutes or until the mixture thickens slightly.
Remove from the heat and pour into a sterilised jar while still hot.
Makes 1 jar

Cook?s tip
This salad can also be enjoyed with cold meats and at a braai. It also looks attractive and tastes good mixed with blanched green beans.
