Curried mussels

    ml
    margarine
  • 2
    cloves garlic, crushed
  • 5
    ml
    fresh ginger, grated
  • 5
    ml
    mild curry powder
  • 125
    ml
    milk
  • 250
    g
    mussels in brine, drained
  • 50
    ml
    fresh cream
 

Method

 
Melt the margarine in a small heavy-based saucepan. Add the garlic and ginger and stir-fry lightly. Add the curry powder and stir-fry for a few seconds. Add enough milk to cover the base of the saucepan. Stir until mixed. Add the mussels and cream and heat through. Serve with rice or fresh bread and a salad. Serves 1-2.
